Dairy and Gluten Free Chocolate chip cookies and silicone baking mat review

My sister made these cookies for me when she visited in March and I was skeptical at first since my favorite food group was left out…which of course is butter 😉

But these cookies are so delicious and my kids love them. 

I also got to try out The Baker’s Mat Silcone Baking mat to review. I have been wanting to try out a silicone baking mat for a while not and these cookies were the perfect test for the mat. The silicone mat replaces the need for parchment paper and cooking sprays. FDA approved, dishwasher safe, also cleans easily with soap and water. Lays flat, great for baking cookies, rolling dough, making candy or pizza dough.

These cookies are pretty sticky and since there is no butter in them, I didn’t know if they would stick to the baking mat or not. I was impressed they did not stick one bit to the mat. IT was so easy to place in my cookies sheet and once they were done cooking, I just lifted the cookies off the mat and they came off effortlessly! 

The Baker’s Mat easily handles the extreme temperatures of the freezer, microwave and all types of ovens, and even the dishwasher so once my cookies were done cooking I threw it in the dishwasher to see how it cleaned and if course if cleaned up so nice. There actually were no crumbs left, just a little residue from the peanut butter so the dishwasher easily washed that off. It can withstand temperatures from -40°F to 480°F (-40°C to 249°C).

Healthy Chocolate Chip cookies
  • 1 cup almond butter
  • ⅔ cup coconut sugar
  • 1½ teaspoons vanilla
  • 2 large eggs
  • ⅔ cup rolled gluten free oats
  • 1 teaspoon baking soda
  • ⅔ cup dairy free dark chocolate chips
  1. Mix all ingredients and Bake at 350 for 9-11 minutes. Do not overbake. Cookies will continue too cook on pan even after you take them out of the oven. You want them too be gooey. Makes about 15 cookies.
