If you have been following my blog lately, you know I have been trying to loose the baby weight from baby #4. I have lost a total of 75 pounds so far from the day I gave birth so it’s been a success so far, but I still have about 15 to go. I wanted to share with you one of my favorite meals I eat while loosing weight and I always have a box of Success® boil in a bag rice on hand.
If your not trying to loose weight, this is still a great recipe to try but you can just put your favorite dressing on top or this dressing recipe here that is super yummy!
For lunch and dinner I like to have a vegetable, starch and protein and sometimes I throw in a fruit if I am really hungry.
This meal is so easy and quick to throw together and it actually makes 2 servings so what you don’t eat for 1 meal, you can pack up and eat the next day.
All it is, is 1 pouch of Success® Jasmine rice which only takes 8-10 minutes to cook. While you are boiling that, throw some chicken, corn, and honeydew or watermelon in a bowl and some ready make pico de gallo. I like to use a rotierrie chicken since it’s already cooked.
For my “dressing” I just sprinkle some salt and pepper, italian seasoning and a little lime juice all over all the ingredients after I throw the rice in. I love using Success rice when I am trying to loose weight because normally I go for bread when I am hungry but that never works out well on the scale but with Successs® boil in a bag rice, it makes me full without all the calories.

I was able to find both kinds of aromatic rice at Walmart. I tried looking at my local supermarket but they didn’t carry it but Walmart did. I was even able to look up the jasmine rice online at Walmart’s website and I could tell which store around me carried it.
