The big game is coming in just a few days and I wanted to share some recipes from Rhodes that you can whip up un a jiffy! Today I have these lemon/cranberry hot cross rolls. They are amazing and so easy to make! And tomorrow I will have a savory recipe for you so you will be covered for the big game.
What I love about Rhodes bread is that it’s frozen and cuts your preparation time way down! I love-making homemade bread but it is time-consuming so with Rhodes you can have delicious bread in half the time! So when you are in the supermarket, look for the Rhodes Dinner rolls in the freezer section.
I made these cranberry hot cross buns if you needed a little dessert or fun appetizer.
- 18 rhodes dinner rolls, thawed but still cold
- ¾ cup dried cranberries
- 1⅓ cups powdered sugar
- 1½ t lemon zest
- 1 t lemon juice
- 1-2 T milk
- Cut 6 rolls in half. Press 1½ rolls into a flat circle. Put 1 T of cranberries on roll and bring edges together, mixing the berries into the dough. Shape into a round roll. Place on a large baking sheet. Repeat for the rest of the rolls.
- Cover with sprayed plastic wrap and let double in size. Remove wrap and bake at 350 for 20 minutes or until golden brown. Let cool. Mix ingredients for frosting and frost rolls.

I never wanted to make hot cross rolls because I thought that little sliver of icing was not enough for me! However I think it is just enough to balance the savory of the rolls and it makes them perfect.
