I have a treat for yall today! Almost everyone has some kind of dressing at thanksgiving so I decided to take that and add it to my favorite cornbread recipe along with some potato icing and sweetened cranberries. This will be a HIT at any party you bring these to or if your just whipping up something for the family. Not only do they look amazing but they taste even better! So you won’t dread leftovers this thanksgiving!

Cape Cod Select premium frozen cranberries
yukon gold potatoes
1 cookbook covers in sugar and flour
First boil 4 potatoes. Then put Cape Cod Select premium frozen cranberries in another pan and cover in sugar. Heat on low and let sugar melt.
Grab your nonstick muffin pan. Heat the oven to 450 degree’s.
Here is the trick to making the outside of these cupcakes crispy. Pour a little oil in each muffin slot. Just enough to cover the bottom. Place in the oven and let heat up while mixing the muffins together.
Mix 1 cup flour, 1 cup cornmeal, 3 tsp baking powder, 1 tsp baking soda, 2 T sugar together. Mix.
Add 1 1/4 cup buttermilk, 1 egg and 1/4 cup oil. Mix all together.
Get our your dressing and mix together. Mine looked a little dry so don’t tell anyone but I added a little extra buttermilk!
Take the pan that has been heating out of the oven and add cornbread mix and place back into the oven.
Cook for about 10 minutes or until golden brown on top.
After the potatoes have been cooking for oh around an hour, put in a mixer along with 3T of butter, or more if your feeling crazy!
Whip them real good and add 1/2 cup milk, a little salt and pepper to taste.
Add the potatoes to a ziploc and cut a small hole in one of the ends.
Pipe the potatoes on top of the “cupcakes” like you would icing. Then add cut up green onions, and cranberries and sauce on top!

I am currently on a diet….blah! So the last thing I get to think about is comfort food. But I spruced up one of my old recipes to make it a lower calorie dinner but still comforting. In my house, nothing says comfort like pasta and if you throw in a little sausage and cheese, that speaks right to my heart! Plus this is a one pot meal. Everything you need for an entire dinner is right in one pot so less clean up!
I used whole wheat pasta, turkey sausage and low sodium chicken broth but if your not dieting like I am, you can go for the pork sausage or white pasta. I just love this recipe because it’s comfort food that meets healthy since there are a lot of vegetable thrown in.
But let’s be honest, probably my favorite thing about this dish is you can cook it up in under 20 minutes and it’s hearty enough to be your entire meal. 1 pot, 1 mess, 1 cleanup.

You can measure 1/4 tsp, 1/2 tsp, 1 tsp, and 1 tbsp in this one spoon!

Who doesn’t love S’mores? I could eat them for an entire meal but I hate to eat things from a box that I know I can homemake…easily!
So here is my recipe for homemade graham crackers. They are so easy to make and the only other things you need to pick up for this yummy dessert is chocolate bars and a bag of marshmallows and a Good Cook Spring Bark Mold!
This is the Good Cook brittle/bark silicone mold. It is the PERFECT size for graham crackers and it has these super cute little molds so one side of your crackers will have a cute design on it. You can bake so many things in this mold because it is oven safe but you could also make chocolate or candy. Look at these super cute Good Cook Chocolate popcorn squares! It was so easy to use, cleaned up really well! I love this mold!
This is what the graham cracker dough should look like once you mix all the ingredients.
Form your dough in balls and 1 into each cavity in the mold then press to cover all the molds.
I got my dough scraper, along with the help of my 4 year old because cutting graham crackers is tough! The squares are the perfect size for s’mores and the mold has the pre-cut lines where you need to cut! Also sprinkle a little sugar on top because it brings out the shape of the molds on the crackers.
In order to make my S’mores I turned on the broiler and put 1 square along with 3 pieces of chocolate then 1 marshmallow and heated until the chocolate was melted and marshmallow were gooey. Top with another graham cracker and chow down!
