Another year and another JSL Foods Fortune Noodle Blogger Recipe Challenge and I am so excited for my recipe this year! I was given Udon noodles and challenged to create a recipe and I came up with Udon Étouffée. Étouffée is traditionally served with rice but the addition of the JSL Foods Fortune Udon Noodles brings a great recipe and turns it into a rock star recipe. For this recipe, I used the Original flavor but I think the mushroom flavor would work well too.
You can purchase JSL Foods products at: Safeway, Albertson’s, Shaw’s, Star Markets. Tom Thumb, Target. I actually saw these in Safeway the other say while I was shopping!

Put in medium high heat and stir until combined. When it starts to bubble, stir until a dark roux forms. This takes around 30 minutes. If you want you can turn your oven to 350 and put in cast iron skillet. Stir every 20 minutes until it’s the color you want.
Here is a little guide on what color you want your roux. The first picture is when I first put it in the skillet, the second was about halfway through then the last is that nice golden brown color you want. You can it to be brown but not burnt so cooking it slow is the name of the game.
I cooked my Roux in the oven because I wanted to get to the other steps of the Étouffée. Next I cook 1 TBS butter and 1 Tbs minced garlic in a pan and let cook on medium for about 2 minutes. Just enough to get the garlic smelling good. Add peeled shrimp.
Sprinkle some salt and pepper over the shrimp. Cook on medium/high heat, turning oven until the shrimp is pink.
If you cook it to long, the shrimp will be chewy.
Set the shrimp aside when your done cooking it.
Next cut up your “trinity”, a Cajun term for the onions, bell peppers and celery. Once your roux is brown, take it out of the oven, then add your trinity to it and cook until onions are translucent, on medium high heat for a couple of minutes.
Then add your spices, salt, pepper, parsley, red pepper
Add chicken stock, hot water, rotel, and bay leaf and let cook for 12-15 minutes, stirring occasionally on medium heat.
While that is cooking, get your JSL Foods Fortune Udon Noodles. I cook them according to the package in the microwave. It only takes 3 minutes. I just added enough water to cover the noodles.

So since this was such a killer deal, I decided to make this meal even more special and taking one of my kids on a date! Then, I literally turned into a lumberjack and cut down some wood for a bonfire in our yard. I thought what better way to enjoy this meal than to eat it around a campfire?! And yes, I always wear red lipstick when I am chopping wood 😉
After dragging all the wood up our hill, I lit a small fire, set up our little red bench and put the pizza in the oven. While it was baking, I got some copper mugs, just in case we wanted to be real fancy, some red Christmas plates, and a little wagon to bring everything out to the bonfire. After the pizza was done cooking, I put it on our special plates and set up this little scene. This would be a GREAT idea for your next Christmas party. Instead of hours of cooking, put more time into setting up a Christmas scene than cooking in the kitchen. Your guests will love this pizza and Coca-Cola.
We came outside and my family absolutely loved my set up! We sat by the fire, sipped Coca-Cola, and ate some delicious cheese pizza (which is her favorite). You don’t have to put a lot of money into doing special things for your kids! In all, this little date cost me less than $10 and it was worth every penny spent to see this girl smile. If you’re doing this for a bigger, group, just buy a few more pizzas!

Have you ever eaten at a restaurant and fallen in love with a dish then tried to recreate it at home. When we visited Steamboat, CO a few years back that is what happened to us and a dish called “Brussels sprout hash” at a fantastic eatery called “Laundry”. Brussel sprouts have never been my go to veggie choice but this dish sounded so good on the menu, we had to try it. It was incredible so when we got home I recreated the dish and it has been a family favorite ever since. But this time I decided to make it an even more hearty meal by adding TresOmega Coconut oil and Organic Quinao Penne Pasta. So instead of this being a side dish, it has transformed into a meal!
First dice up a yellow onion and caramelize it in a sauce pan with 1 TB TresOmega coconut oil. To caramelize an onions, saute it until it’s a little past golden brown but not burned. Set aside.
While that is cooking, diced up the potatoes, and add salt and pepper to taste and some cajun seasoning. Add 1-2 tsps TresOmega coconut oil and 1 tsp Italian seasoning and stir around. Cook at 400 degrees for 45 minutes. Stirring every now and then so the potatoes don’t burn on the bottoms. Then need to be crispy not burned.
When they are done cooking, they will look nice and crispy.
While the potatoes are cooking, you can cook your bacon. I cook mine in the oven at 375 until done. I cook them on aluminum foil so its less mess to clean up afterwards. Once that us done cooking, set aside.
Next up is cooking the brussel sprouts. I like to cut off the ends and pulse them in a food processor a few times to get them cut up.
Add the brussel sprouts, cooked onions and 1 Tbs coconut oil to a pan and cook until sprouts are tender, around 10-15 minutes.
While that is cooking, you need to cook your TresOmega Organic Quinoa Penne Pasta according to the package.
For the sauce for the pasta, in a small saucepan, simmer together 1 can of tomato sauce, 1 tsp of italian seasoning and 1/2 cup parmesan cheese.
Last but not least, add bacon, and your cooked potatoes to your brussel sprouts and cook on medium for about 5 minutes or until warmed through.
Strain out your pasta and top with sauce. Add sprout hash on top and top with goat cheese and enjoy.

You read that right, today I am bringing you a recipe for a stir fry burger. It will knock your socks off, trust me! It combines two of my favorite things, burger and stir fry all in one delicious meal. I am going to show you how to make these today so first you have to start with some amazing ingredients.
I went over to Safeway and picked out some Fortune Yakisoba Teriyaki stir fry noodles. They were in the refrigerated section near the fruits and vegetables.
Open up the pack and put the noodles and 1/4 cup water in a microwave safe bowl. Then add seasoning and stir. Microwave for 3 minutes.
Stir again once you take it out of the microwave.
Turn the bowl into a cutting board and cut your noodles up.
Put the noodles into a bowl and pour in 1/2 up parmesan cheese.
Stir and put in the fridge for 8 minutes.
While that is chilling, in a skillet, put half an onion, 1 tsp of minced garlic, 2-3 pieces of cooked bacon and salt and pepper.
Saute until onions are caramelized then add 1/4 cup teriyaki sauce and combine.
Add to the chilled noodles and let chill for another 8-10 minutes.
Shape the noodles into the shape of a burger patty and chill for a few more minutes.
While the burgers are chilling toss together the asian salad. I got a ready-made salad from Safeway that came with dressing and toppings.
Get one egg and whisk it really good.
Spray the pan with nonstick cooking spray. Brush the tops with the egg and bake for 20-25 minutes.
Once it is golden brown, take it out of the oven and put the burger on a bun and top with the salad and enjoy!
