Butternut Squash Alfredo
  • 1 large butternut squash or 3 small ones
  • ½ cup parmesan cheese
  • salt and pepper to taste
  • noodles of your choice (I used egg noodles)
  • 3 cloves minced garlic
  • ½ cup water
  • cilantro *optional
  1. Peel your squash and cut into small squares.
  2. Boil a pot of water and boil squash until tender.
  3. Once it's cooked, puree squash and garlic in a blender or food processor.
  4. In a small saucepan pour in squash puree, water cheese and salt and pepper.
  5. If your sauce is to thick, add more water. Cook on low until cheese is melted.
  6. Serve over noodles.
  7. You can also garnish with cilantro.
